you can design your sub domain anyway you like.
I believe the search engines prefer top level domains but to rank high you should consider some SEO
for your sub domain page i.e keywords, content and backlinks.

Actually, you would only have to register the domain "'fitnessforever.com" ... not the subdomain "vitamins". You would then add "vitamins" through your cpanel as noted above. That would give you vitamins.fitnessforever.com

How about creating a folder within your main domain "fitnessforever.com" called "vitamins" then that index page should show up as fitnessforever.com/vitamins
I think it looks better than than a subdomain, but subdomains are great too I've got a few. You can go the subdomain route or the folder route, either way you don't pay for another domain.

Do you mean PLR articles or Ebooks?
One big mistake with PLR articles is not changing a single word in the article and just submitting them or placing them on your site as is. Mistakes with PLR ebooks is not putting in a resources list at the end with your affiliate links and not distributing them enough (if allowed)

I suggest you stick to about 3 pen names and try and keep your niches closely related to each other. So if you're looking to build 20 niches you could group these into 3 e.g: "weight loss" >diet,exercise,fitness,health,muscle,fatloss,six pack abs, "Internet Marketing" > blogging,article writing,ebooks,adwords,adsense,traffic, and "Making Money" > work from home, surveys, forex, paid to click, paid to read, affiliate marketing.
So you could write 20 articles with 3 pen names on 3 groups of 20 related niches. Phew! Know what I mean?
